This lovely, purple-flowering herb give the Glarner Schabziger cheese its savoury flavour. Fresh leaves should be harvested before flowering and then dried in the shade. Later, grind the dried leaves into powder and use in recipes. The powder can be used as a curry replacement. Height reaches about 30–70 cm.
Sow directly into the field in April in rows 30 cm apart. It germinates slowly, so beware of early weeds. Harvest the leaves in June and possibly obtain a second harvest in Augusts.
