You could call this the white version of black salsify. Salsify was common in gardens and markets until the 17th century in Central Europe. It still has a strong place in England and the United States where it continues to be popular. But it is experiencing its own renaissance as more of us in Central Europe become enlightened to its usefulness and flavour. It is one of the most delicious winter vegetables and has high nutritional value such as having much inulin.
Sow from April onwards in rows 30 cm apart into deep soil. Dig up roots in the fall, place them in plastic bags, and store them in a root cellar or basement. We recommend that you dry it and peel it then wash it afterwards.
