In southern Germany, the Filderkraut white cabbage is almost a cult plant. Its huge and elegantly tapers into a fine point as it develops it mild flavour all summer. For sauerkraut, it is unmatched, but it is also delicious steamed or chopped for salads. Filderkraut is so mild that it leaves no sulphur odour when cooked as other cabbages do.
Sow in early April into large seedling trays. Transplant into the field in May into compost-rich garden soil. Space plants at 60 ✕ 60 cm on each side. Harvest in October.
